Jimmy Proffitt, of The Appalachian Tale, cooks in cast iron nearly every day. It’s something his ancestors did for generations throughout Virginia and West Virginia, and it’s what inspires him each time he gets in the kitchen. 

Join him at Andiamo Lodge for a family-style meal, prepared almost entirely in cast iron. The table will be set with his grandparent’s and great-grandparent’s heirloom platters and Appalachian recipes that are served at every gathering. 

The meal will start with Tomato Soup and his Mexican Street Corn Biscuits, followed by an entree of Crispy Chicken Thighs and sides of Smashed Roasted Fingerling Potatoes, Leather Britches (an Appalachian favorite preparation of Green Beans), Skillet Corn, Cole Slaw, Deviled Eggs (which he likes to call The Devil’s Cackleberries!), his Bread & Butter Pickles (which he makes each year from cucumbers he grows), and Brown Butter Cornbread. Dessert will be his Pineapple Upside Down Cake, made with moonshine cherries.
